Breadstick Dough

Ingredients
2 | ea. | Pizza dough (8 oz. each) |
2 | oz. | Fresh yeast |
2½ | oz. | Golden syrup (Tupelo honey) |
6¼ | c. | Water (Lukewarm 78°F) |
3 | lbs. | All-purpose flour |
3 | lbs. | Cake flour |
1⅕ | oz. | Salt |
Preparation
- Mix flours with dough on electric mixing bowl (Speed 1).
- Add yeast, water and wisk for 3 minutes (Speed 1).
- Let sit for 5 minutes.
- Slowly add honey, salt and whisk for 10 minutes (Speed 2).
- Result product should be smooth and elastic, when is pushed should bounce back.
- Place dough in lightly floured container and covered with wet towel.
- Let it rest overnight in cooler.
