Breadstick Dough

Ingredients

2 ea. Pizza dough (8 oz. each)
2 oz. Fresh yeast
oz. Golden syrup (Tupelo honey)
c. Water (Lukewarm 78°F)
3 lbs. All-purpose flour
3 lbs. Cake flour
1⅕ oz. Salt

Preparation

  1. Mix flours with dough on electric mixing bowl (Speed 1).
  2. Add yeast, water and wisk for 3 minutes (Speed 1).
  3. Let sit for 5 minutes.
  4. Slowly add honey, salt and whisk for 10 minutes (Speed 2).
  5. Result product should be smooth and elastic, when is pushed should bounce back.
  6. Place dough in lightly floured container and covered with wet towel.
  7. Let it rest overnight in cooler.
