Ingredients

6 ea. Pullman white bread (Skin off)
3 oz. Garlic, minced
1 qt. Parmesan Reggiano, grated
1 lb. Butter Unsalted (Plugra)
3 c. Olive oil
1 oz. Kosher salt

Preparation

  1. Slice bread, the diced in cubes.
  2. Melt butter; add minced garlic and olive oil.
  3. Place bread into a large bowl, add parmesan cheese, salt and pepper evenly, add butter and oil mixture and toss well.
  4. Place croutons in a sheet tray with parchment paper.
  5. Cook in oven 250˚F for 20 minutes, then 300°F until golden brown and crispy.
  6. Cool down and transfer to a Lexan container, label and date.
