Insalata Verde

Ingredients

3 oz. Asparagus, jumbo
1 oz. Arugula local
1 oz. Boston lettuce
oz. Lemon mascarpone dressing
1 oz. Pistachios, toasted
¼ ea. Whole avocado, diced
½ oz. Parsley
Kosher Salt, Black Pepper, and Olive oil (Primo)

Preparation

  1. Shave asparagus and place them in ice cold water to crisp.
  2. Place arugula, Boston lettuce leaves and shaved asparagus in a stainless steel bowl, season with a pinch of salt and pepper. Add diced avocado and mascarpone dressing, toss salad gently by hand to coat everything uniformly.
  3. Rectify seasoning.

ASSEMBLY OF THE DISH

  1. In a cold plate, place the salad.
  2. Add chopped parsley, toasted pistachios on top and drizzle some "Primo" olive oil to finish.
