Ingredients
3 | oz. | Asparagus, jumbo |
1 | oz. | Arugula local |
1 | oz. | Boston lettuce |
1½ | oz. | Lemon mascarpone dressing |
1 | oz. | Pistachios, toasted |
¼ | ea. | Whole avocado, diced |
½ | oz. | Parsley |
Kosher Salt, Black Pepper, and Olive oil (Primo) |
Preparation
- Shave asparagus and place them in ice cold water to crisp.
- Place arugula, Boston lettuce leaves and shaved asparagus in a stainless steel bowl, season with a pinch of salt and pepper. Add diced avocado and mascarpone dressing, toss salad gently by hand to coat everything uniformly.
- Rectify seasoning.
ASSEMBLY OF THE DISH
- In a cold plate, place the salad.
- Add chopped parsley, toasted pistachios on top and drizzle some "Primo" olive oil to finish.
