Grilled Berkshire Porkchop

Ingredients

12 oz. Kurobuta pork chop
4 oz. Marble potatoes
2 oz. Roasted garlic, skin on
4 oz. Broccolini
½ oz. Olive oil
oz. Tomato olive salsa
Kosher salt, and black pepper to taste

Preparation

  1. Rub pork chop on olive oil, salt and pepper. Place on hot grill and cook to preferred temperature.
  2. In a sauté pan add olive oil and roast marble potatoes with salt and pepper, add roasted garlic and blanched broccolini.

ASSEMBLY OF THE DISH

  • Place potatoes, broccolini and garlic on the middle of plate, place pork chop on top and garnish with tomato olive salsa and a spring of rosemary.
