Tomato Olive Salsa

Ingredients

5 qt. Roasted tomato (see sub recipe)
¾ c. Mustard seed, toasted
1 c. White Chardonnay vinegar (Unio)
5 c. Water
1 bunch Parsley
5 c. Kalamata Olives, halved
2 c. Olive oil
Kosher salt and black pepper to taste

Preparation

Smash roasted tomato by hand until is not chunky. Add the rest of ingredients and mix well.
