Tomato Olive Salsa

Ingredients
| 5 | qt. | Roasted tomato (see sub recipe) |
| ¾ | c. | Mustard seed, toasted |
| 1 | c. | White Chardonnay vinegar (Unio) |
| 5 | c. | Water |
| 1 | bunch | Parsley |
| 5 | c. | Kalamata Olives, halved |
| 2 | c. | Olive oil |
| Kosher salt and black pepper to taste |
Preparation
Smash roasted tomato by hand until is not chunky. Add the rest of ingredients and mix well.
