Caramelized Onions

Ingredients

5 lbs. Yellow Onions (Julienne cut)
1 c. Olive Oil "Unio"
4 oz. Thyme
6 oz. White Sugar
5 ea. Bay leaves
Kosher Salt, White Pepper

Preparation

  1. In a hot stainless steel pan add olive oil. Add yellow onions, salt, pepper, thyme leaves and sugar.
  2. Cover with parchment paper and reduce heat down to low.
  3. Let it caramelized for over 20 minutes until onions are translucent with lightly golden color.
