Oven Roasted Tomatoes

Ingredients
2 | c. | Vine ripened tomatoes, sliced in half |
½ | c. | Minced garlic |
½ | c. | Kosher salt |
½ | c. | Dry oregano |
½ | c. | White sugar |
2 | c. | EVOO |
Preparation
- Preheat oven to 325°F.
- Cut Roma tomatoes in half and place them in a big bowl, add sugar, salt, pepper, garlic, olive oil and mix.
- Place them in line on sheet pans with parchment paper (face up—skin down).
- Bake in the oven approximately two hours.
- When the tomatoes are soft, let it cool down and pull skin off.
