Preparation
- Mix water, yeast and salt into a container on side.
- Place the flour in a mixer bowl with the dough hook.
- Add the water, yeast and salt mix to flour slowly, and let mix for 10 minutes in a medium speed.
- Place dough on oiled sheet pan, let it rise for 2 hours under moist towels.
- Make balls of 8 oz. each, cover them with a moist towel or cheese cloth and place them in the cooler to rest for about 4 hours before use.
