Pizza Dough

Portion/Serving: 60 balls of 8 oz. ea.

Ingredients

22 lbs. Flour "Caputo Pizzeria"
6 l. Water (80° F)
7 oz. Kosher Salt
3 ½ oz. Fresh Yeast

Preparation

  1. Mix water, yeast and salt into a container on side.
  2. Place the flour in a mixer bowl with the dough hook.
  3. Add the water, yeast and salt mix to flour slowly, and let mix for 10 minutes in a medium speed.
  4. Place dough on oiled sheet pan, let it rise for 2 hours under moist towels.
  5. Make balls of 8 oz. each, cover them with a moist towel or cheese cloth and place them in the cooler to rest for about 4 hours before use.
