Ingredients
3 | lbs. | All-purpose (AP) flour |
1 | lb. | Fine Semolina flour |
3 | c. | Whole eggs |
½ | c. | Dry white wine (Pinot Grigio) |
Preparation
- Whisk together eggs and white wine.
- Gradually add eggs to flours in bowl and mix until smooth and elastic.
- Let rest one hour before rolling into sheets as thin as possible, cut into 4 " squares. Add lots of semolina and flour between each layer to avoid stick with each other.
