Ingredients

3 oz. Silk Handkerchief Dough
2 oz. Pesto Sauce
1 oz. Parmesan Cheese
½ oz. Pecorino Romano
¼ oz. Unsalted Butter “Plugra”
Salt and pepper to taste
2 oz. Pasta Water (from pre-cooked pastas)

Preparation

  1. Cook Fresh handkerchief pasta sheets in hot salted boiling water.
  2. Place pesto sauce in a pan over medium heat with pasta water, and butter.
  3. Add the hot handkerchiefs over sauce, finish it with parmesan cheese. Toss over pasta to coat with sauce.
  4. Serve in hot a hot plate.
